grated unpeeled zucchini

chopped walnuts

lemon rind
Instructions
Preheat convection oven to 350 degrees F.
Grease 9 x 13-inch loaf pan.
Whisk flour, sugar, salt, baking powder, baking soda, and cinnamon.
Add the oil, eggs, and vanilla. Blend well.
Fold in zucchini, walnuts, and lemon rind. Pour the batter in to the grease loaf pan.
Bake at 350 degrees F for 45 to 50 minutes.
Remove from oven, let cool, then serve. Enjoy.
