Ingredients

all-purpose flour

baking powder

cornstarch

softened butter

cup
white sugar
½
cup
ube halaya
ube jam
1
egg
room temperature
1
teaspoon
ube flavoring/extract
Instructions
Preheat the oven to 350 degrees F.
Line the baking tray with parchment paper.
Whisk flour, baking powder, cornstarch, and salt. Set aside.
Beat sugar butter until creamed.
Add the ube jam and combine.
Add the egg and ube flavoring and mix until smooth.
Add the dry ingredients and beat until well combined.
Using a spoon or ice cream scoop, drop one tablespoon of the cookie dough at a time into the baking tray.
Bake in the preheated oven for 10-12 minutes.
Let it cool for at least 10-15 minutes before serving.
Notes
You may add ½ cup of semi-sweet chocolate chips. You may use white, butterscotch, or dark chocolate chips.
You may also add ¼ cup of unsweetened desiccated coconut.
If ube flavoring is not available, you may use vanilla extract.
