In a large pan or wok, on medium heat, sauté onion and garlic in oil for 2 minutes.
Add the pork and sauté for 5 minutes.
Add water, fish sauce, brown sugar, salt, and ground black pepper.
Let simmer for 30 minutes. Stir occasionally.
Add the tomato sauce, chayote squash, carrots, and potatoes. Let it simmer until tender, around 15 minutes. Stir occasionally. Add more salt if needed.
Serve and enjoy.
Notes
If during simmering the pork starts to get dry, don’t hesitate to add more water.
To save time, I usually start cooking the pork. While the pork is simmering, I then prepare and cut up the chayote, carrots, and potatoes.
If you have an allergy to fish sauce or simply don’t have it available in your kitchen, you may substitute fish sauce with soy sauce.
