Ingredients

pork belly or pork shoulder
cut 1-inch thickness

soy sauce

teaspoon
fish sauce

teaspoons
sugar

bay leaf

cup
water

can coconut milk
400ml or 2 c fresh coconut milk

teaspoon
ground black pepper
pinch
of salt
if needed
Instructions
Using a pan on medium heat, sauté onion and garlic with oil.
Add the pork and sauté for 2-3 minutes.
Add the water, fish sauce, and soy sauce, bay leaf, sugar.
Cover the pan and let it simmer for 30-60 minutes or until pork is tender, stirring occasionally.
Add the coconut milk and simmer for another 5-10 minutes.
Season with ground black pepper and salt, if needed.
Let it cool for a few minutes, then serve warm.
Notes
When simmering the liquid will be reduced. If the liquid starts to dry up, you can add a little bit of water to keep it from drying.
Please add the salt last. The fish sauce is already salty, your dish might need not salt.
