Ingredients

unsalted butter

pumpkin puree
canned
½
cup
brown sugar

cup
white sugar

eggs

teaspoon
vanilla

flour

nutmeg

baking powder

teaspoon
salt
Instructions
Preheat convection oven to 375 degrees F.
Line baking tray or cookie sheet with wax paper.
Cream the butter, brown sugar, and white sugar.
Blend in the eggs, pumpkin puree, and vanilla into the butter-sugar mixture.
Fold the flour, nutmeg, baking powder, and salt into to the wet ingredients.
Drop 1 spoonful or 1 ice cream scoop of the cookie batter on the cookie sheet (lined with wax paper).
Bake for 12-14 minutes.
Remove from the oven and let it stand for 10-15 minutes before removing from the baking tray/cookie sheet.
