This fudgy ube chocolate brownie recipe uses real ube and cocoa powder. It is also easy to make and contains ube extract and chocolate chips.

Ingredients

all-purpose flour

granulated sugar

unsweetened cocoa powder

vanilla

baking soda

vegetable oil or canola oil

tablespoons
ube flavoring

cooked grated ube
1
cup
semi-sweet chocolate chips

large eggs
Instructions
Preheat oven to 350 degrees F.
Line 9x13 inch baking pan with parchment paper.
In a large bowl, whisk the flour, sugar, cocoa powder, baking soda, and salt.
Add the oil, eggs, vanilla, and ube flavoring.
Stir in the cooked grated ube. Mix using a large spatula until the batter becomes smooth.
Stir in the chocolate chips until well combined. You may leave some to sprinkle on top.
Bake for 25-30 minutes.
Let it cool for at least an hour before serving. Can be left 3 days at room temperature or 5-7 days in the fridge.
Notes
You may use white chocolate chips or butterscotch chocolate chips.
I only use one cup of sugar for a less sweet brownie.
Cocoa powder can be replaced with Milo or Ovaltine Powder, but be aware that your brownie will have less chocolate flavor.
