    Soft ube butter cookies are made with ube jam are sweet and easy to make. Theses ube cookies are very soft.

    Why this recipe works

    • The ube extract provides a beautiful deep purple color, and the halayang ube or purple yam jam adds a delicious ube taste. 
    • The cookies are soft but not chewy.

    Ingredients 

    • All-purpose flour 
    • Baking powder
    • Cornstarch 
    • Salt
    • Butter - unsalted butter is ideal for this recipe.
    • White sugar
    • Egg - use egg at room temperature. 
    • Ube halaya (ube jam) - Instead of using ube powder, I used homemade jam or store-bought halayang ube for this recipe. 
    • Ube flavoring - A small amount enhances the ube taste. 

    How to make this recipe

    Step 1: Preheat the oven to 350 degrees F. 

    Step 2: Line the baking tray with parchment paper. 

    Step 3: Whisk flour, baking powder, cornstarch, and salt. Set aside. 

    Step 4: Beat sugar butter until creamed.

    Step 5: Add the ube jam and combine.

    Step 6: Add the egg and ube flavoring and mix until smooth. 

    Step 7: Add the dry ingredients and beat until well combined.

    Step 8: Using a spoon or ice cream scoop, drop one tablespoon of the cookie dough at a time into the baking tray.

    Step 9: Bake in the preheated oven for 10-12 minutes.

    Freezing and Storing Instructions

    The cookies will last 4-5 days if placed in an airtight container at room temperature or up to 3 months in the freezer. 

    Variations

    You may add ½  cup of semi-sweet chocolate chips. You may use white, butterscotch, or dark chocolate chips. 

    You may also add ¼ cup of unsweetened desiccated coconut.

    FAQs and Expert Tips

    If ube flavoring is not available, you may use vanilla extract. However, it will not give you that deep purple color.

    • ½ cup ube halaya ube jam
    • 1 egg room temperature
    • 1 teaspoon ube flavoring/extract

      Made this recipe for a family party and it was a huge hit! It wasn't too sweet and it was nice and soft on the inside. I made mine with ube halaya that I prepared myself and I'm happy that it worked out well 🙂
