- Ube halaya (ube jam) - Instead of using ube powder, I used homemade jam or store-bought halayang ube for this recipe.
- Ube flavoring - A small amount enhances the ube taste.
How to make this recipe
Step 1: Preheat the oven to 350 degrees F.
Step 2: Line the baking tray with parchment paper.
Step 3: Whisk flour, baking powder, cornstarch, and salt. Set aside.
Step 4: Beat sugar butter until creamed.
Step 5: Add the ube jam and combine.
Step 6: Add the egg and ube flavoring and mix until smooth.
Step 7: Add the dry ingredients and beat until well combined.
Step 8: Using a spoon or ice cream scoop, drop one tablespoon of the cookie dough at a time into the baking tray.
Step 9: Bake in the preheated oven for 10-12 minutes.
Freezing and Storing Instructions
The cookies will last 4-5 days if placed in an airtight container at room temperature or up to 3 months in the freezer.
Variations
You may add ½ cup of semi-sweet chocolate chips. You may use white, butterscotch, or dark chocolate chips.
You may also add ¼ cup of unsweetened desiccated coconut.
FAQs and Expert Tips
If ube flavoring is not available, you may use vanilla extract. However, it will not give you that deep purple color.
