    The Best Mango Muffins

    One of my favorite fruit is mango, so I thought I should make the best mango muffins recipe for you. This is one of my favorite muffins. I absolutely recommend this muffin.

    INGREDIENTS:

    • Softened unsalted butter
    • White sugar
    • Egg, beaten
    • Milk
    • All-purpose flour
    • Baking powder
    • Salt
    • Mango, ripe

    HOW TO MAKE THIS RECIPE:

    1. Preheat convection oven to 375 degrees F. Line muffin tray with 12 muffin paper liners. Set aside.
    2. Cream the butter and sugar.
    3. Add the egg and milk.
    4. Whisk the flour, baking powder, and salt and into the wet ingredients. Blend well.
    5. Fold in the diced mangoes.
    6. Pour into each of the prepared muffin lined tray.
    7. Baked on the preheated oven for 20-25 minutes at 375 degrees F.
    8. Remove from oven and let cool for at least 10 minutes before serving.

    • 1 cup ripe mango diced

      muffins have a taste of baking powder and not much flavour of the fruit
      they did rise well - they look nice

      Recipe is easy to follow, the muffins are delicious. I followed the recipe, but I did add 1 teaspoon of vanilla extract.
      Definitely a keeper!

      Definitely a keeper recipe. The batter was so think that I couldn’t believe how light the muffins were. I might try this with a teaspoon of vanilla next time or not. They really were delicious as is. And when was the last time you had a mango muffin?

        Like other reviewers, my batter was really thick. I wasn’t surprised that the muffins didn’t really rise. The only changes I made to the recipe were to add 1/2 c coconut as another reviewer suggested and 1 tsp of allspice. I still thought the muffins were a little bland and dense. If I make them again I will add baking soda, vinegar, a bit more salt, some cinnamon and some toasted nuts.

        I honestly have not tried making mango muffins using frozen mangoes. But I think it will work. If you try it, could please let me know?

          Hi Adelyn,

          I used fresh mangoes in the end but wow came out nice and fluffy. I was initially worried by squeezing mango purée into the mix would make it too wet but I am pleased with the final result. Thank you!

      Ohmygosh!! Made these today….delicious! Light and tasty. I added butterscotch ships/coconut to half of them….extra good. Thank you this is a keeper!
