- Flour
- Sugar
- Baking powder
- Salt
- Egg
- Vanilla

- Milk
- Cooking spray or oil for greasing the loaf pan
How to Make this Recipe:
- Preheat convection oven to 400 degrees F.
- Grease the mini loaf pan.
- Combine the cornmeal, flour, baking powder, salt, and sugar.
- Add the egg, vanilla, butter, oil, and milk. Whisk until mix thoroughly.
- Pour mixture into the greased pan.

By far the best cornbread mini loaves I have ever made. Very moist, fluffy and flavorful. Mine were baked at 25 min - not convection but regular oven in a Wilton 8 loaf mini pan. Thanks for this terrific recipe. I plan to make and freeze a few batches for Thanksgiving bread basket.

How strong is the vanilla flavor? Making these tomorrow and debating on the vanilla.

You might need to increase baking time by 5-10 minutes. I suggest testing it by inserting a toothpick. I hope this helps.
