    This Mini Loaf Cornbread recipe is one of the family favorites. Please enjoy and let me know what you think.

    RECIPE INGREDIENTS:

    • Cornmeal
    • Flour
    • Sugar
    • Baking powder
    • Salt
    • Egg
    • Vanilla
    • Softened butter
    • Oil
    • Milk
    • Cooking spray or oil for greasing the loaf pan

    How to Make this Recipe:

    1. Preheat convection oven to 400 degrees F.
    2. Grease the mini loaf pan.
    3. Combine the cornmeal, flour, baking powder, salt, and sugar.
    4. Add the egg, vanilla, butter, oil, and milk. Whisk until mix thoroughly.
    5. Pour mixture into the greased pan.
    6. Bake into the preheated oven for 20-25 minutes.

    Ingredients

    • 1 cup cornmeal
    • 1 cup flour
    • ⅔ cup sugar
    • 1 tablespoon baking powder
    • ¼ teaspoon salt
    • 1 egg lightly beaten
    • ½ teaspoon vanilla
    • ½ cup softened butter
    • 2 teaspoons oil
    • 1 cup milk
    • Cooking spray or oil for greasing the loaf pan

      By far the best cornbread mini loaves I have ever made. Very moist, fluffy and flavorful. Mine were baked at 25 min - not convection but regular oven in a Wilton 8 loaf mini pan. Thanks for this terrific recipe. I plan to make and freeze a few batches for Thanksgiving bread basket.

        How strong is the vanilla flavor? Making these tomorrow and debating on the vanilla.

          Hi Marie, it’s not very strong. You do not have to add vanilla if you do not want to.

      These little loaves look delightful! May I ask what the baking time willl need to be in my non-convection oven?

        Hi John,

        You might need to increase baking time by 5-10 minutes. I suggest testing it by inserting a toothpick. I hope this helps.
