    Cassava Cake

    This cassava cake is very tasty and sweet. It is good for snacks or as a dessert.  I made this cake using frozen grated cassava, you can also use freshly grated cassava if you have it available.

    RECIPE INGREDIENTS:

    • Grated Cassava
    • Eggs 
    • Coconut milk 
    • White sugar 
    • Milk/evaporated milk 
    • Condensed milk 
    • Coconut strings (buko) or  grated coconut 

    TOOLS NEEDED:

    • 9x13 inches baking dish
    • Tinfoil
    • Spatula or egg beater

    How to Make this Recipe:

    1. Preheat convection oven to 325 degrees F.
    2. Mix all the ingredients in a large bowl.
    3. Transfer cassava mixture into a 9x13 inches baking dish.
    4. Cover Cassava with tin foil and bake for 1 hour and 30 minutes, then bake uncovered for another 30 minutes.
    5. Let it cool before serving.

    TIP:

    • If you are using frozen grated cassava, thaw it first.

    Ingredients

    • 4 cups grated cassava
    • 3 eggs
    • ¾ cup white sugar
    • 1 cup milk/evaporated milk
    • 1 can condensed milk
    • 4 cups young coconut strings (buko) or 2 cups grated coconut
    Prevent your screen from going dark

    Instructions

    • Preheat convection oven to 325 degrees F.
    • Mix all the ingredients in a large bowl.Transfer cassava mixture into a 9x13 baking dish.
    • Cover Cassava with tin foil and bake for 1 hour and 30 minutes, then bake uncovered for another 30 minutes.
    • Let it cool before serving.
