    Ginisang Ampalaya (Sautéed Bitter Melon) with Eggs

    Healthy and delicious sautéed ampalaya (bitter melon) with eggs are quick and easy to make and prepare. Cooks in less than 10 minutes.

    RECIPE INGREDIENTS:

    • Ampalaya (bitter melon or bitter gourd)
    • Salt
    • Water for rinsing the ampalaya
    • Eggs
    • Oil
    • Fish sauce
    • Garlic
    • Onion
    • Ground black pepper

    How to Make this Recipe:

    1. Remove ends of ampalaya, then cut in half lengthwise. Remove the seeds inside the ampalaya. Slice into a half-moon shape and ¼ inch thickness.

    2. In a large bowl, add salt into the ampalaya and mix using hand. Let it stand for 5-10 minutes, then rinse with water and set aside. (The reason why I soak ampalaya with salt is to help remove the bitterness of the ampalaya.)

    3. Lightly beat eggs then add the fish sauce. Set aside.

    4. Saute onion and garlic in 1 tablespoon of oil for about 2 minutes.

    5. Add the ampalaya and let it cook for about 1-2 minutes. Add the eggs and fish sauce mixture, cook until eggs done for about 2 minutes. Season with ground black pepper and add more salt if needed.

    6. Serve.

    TIPS:

    The secret for having eating good ampalaya is to not overcook it. The best way to eat the ampalaya is to eat it half cooked.
