    This bisaya version of the easy lechon paksiw recipe with Sprite is tasty and tangy. Usually made from leftover lechon, this homemade recipe will give your lechon a delicious flavor.

    What is lechon paksiw?

    Paksiw is a dish cooked in vinegar and garlic. Lechon means roast. Usually, lechon paksiw is a leftover pork roast (lechon) that is cooked in vinegar and garlic. The paksiw lasts long if vinegar is used to simmer the pork lechon.

    Paksiw usually has more vinegar than adobo.

    You can use any part of the leftover lechon to make paksiw. Examples are leftover bones, head (ulo ng baboy), pata, and pork belly (liempo).

    The Tagalog version uses Mang Tomas lechon sauce, but this recipe does not include it or liver spread.

    Pork Lechon: Use leftover pork lechon, cebuchon, or lechon kawali. Try to add enough fatty parts to give this dish a tasty flavor.

    Sprite Soft Drink: Adds unique flavor to the dish. You can substitute this ingredient with a 7-up soft drink, ginger ale, orange juice, pineapple juice, or water.

    Vinegar: The best vinegar to use is cane vinegar, but you can also use other vinegar you have on hand.

    Sugar: This ingredient is optional, if you want your paksiw to be a bit sweeter, you can add sugar to it.

    How to make this recipe

    1. Turn the stove on medium-low heat. Combine the Sprite, vinegar, soy sauce, garlic, onion, ground black pepper, and sugar. Bring to a boil.
    2. Add the pork lechon and bay leaf. Cover and let it simmer for 20-30 minutes, stirring occasionally.
    3. Season with salt if needed. Let it cool for at least 10 minutes before serving.

    Pro Tip: You may add 2 tablespoons of oil if needed to add flavor. I usually do this if the lechon I was using did not have enough fat.

    Ingredients

    • 1 kilogram leftover pork lechon, cebuchon, or lechon kawali
    • ½ cup vinegar
    • ½ cup sprite soft drink see notes
    • ⅓ cup soy sauce
    • 4 cloves garlic minced
    • 1 onion chopped
    • ⅛ teaspoon ground black pepper
    • 2-3 pieces bay leaf
    • 1 tablespoon sugar optional
    • Salt to taste if needed
