    Ginataang Baboy (Pork Ginataan)

    Ginataang baboy or Pork Ginataan is a kind of pork stew cooked in coconut milk. This Filipino dish has a deliciously creamy, rich flavor and tender pork meat.

    Tools Needed

    • Medium-sized pan or wok
    • Ladle
    • Chopping board
    • Knife
    • Can opener

    Instructions

    1. Using a pan on medium heat, sauté onion and garlic with oil.
    2. Add the pork and sauté for 2-3 minutes.
    3. Add the water, fish sauce, and soy sauce, bay leaf, sugar.
    4. Cover the pan and let it simmer for 30-60 minutes or until pork is tender, stirring occasionally.
    5. Add the coconut milk and simmer for another 5-10 minutes.
    6. Season with ground black pepper and salt, if needed.
    7. Let it cool for a few minutes, then serve warm.

    Recipe Ingredients and Substitutions

    • You can replace the water with chicken broth, pork broth, beef broth, or vegetable broth.
    • If you use MSG (monosodium glutamate), you can replace the sugar with ⅛ to ¼ teaspoon of MSG.
    • If allergic to fish sauce, you don’t have to include it. You just need to adjust the salt to your taste.
    • You can also use frozen coconut milk, instead of canned coconut milk, but please make sure to thaw it first.

    Tips and Suggestions

    • When simmering the liquid will be reduced. If the liquid starts to dry up, you can add a little bit of water to keep it from drying.
    • Please add the salt last. The fish sauce is already salty, your dish might need not salt.
    • I don’t recommend adding coconut milk before the meat is tender. Adding the coconut milk too soon will make the oil separate.
    • If you like spicy, you can add chopped chili, red pepper flakes, or even sriracha sauce.

    Serve

    You can serve this dish with rice for lunch or supper. Bread, biscuits, or dinner rolls is also perfect for this dish.

    Leftovers and Reheating Instructions

    • Store in an airtight container in the refrigerator for up to 5 days.
    • You can reheat one serving at a time in the microwave for 40-60 seconds.

    • 3 cloves garlic minced
    • 1 small onion chopped
    • 2 pounds pork belly or pork shoulder cut 1-inch thickness
    • 1 tablespoon soy sauce
    • 1 teaspoon fish sauce
    • 2-3 teaspoons sugar
    • 1 piece bay leaf
    • 1 cup water
    • 1 can coconut milk 400ml or 2 c fresh coconut milk
    • ¼ teaspoon ground black pepper
    • pinch of salt if needed
