    Ensaladang pipino is a Filipino-style cucumber salad, an easy-to-make recipe that requires minimal preparation.

    This recipe is versatile because you can add any spice you want to it. Growing up, we used to add soy sauce and vinegar.

    What is Ensaladang Pipino?

    Ensalada means salad in tagalog, and pipino is tagalog word for cucumber. Cucumber salad is refreshing and can be eaten any time, with food or as a snack. I remember we used to eat cucumber as a snack in the afternoon. You can also try to add the cucumber to the Guso Seaweed Salad.

    Cucumber - you can use any cucumber for this recipe. I used English cucumber for this recipe because that is what is primarily available in my hometown.

    Vinegar - you can use your favorite vinegar.

    Ginger - add spice to this recipe.

    Sugar - adds flavor but can be optional.

    Salt - adds flavor but can be substituted with fish sauce or soy sauce.

    Add onions, chilies, and ground black pepper to this recipe.

    How to make this recipe

    Peel and slice the cucumber thinly. Set aside.

    Combine the salt, sugar, ginger, and vinegar.

    • 1 medium-sized cucumber peeled and thinly sliced
    • ½ teaspoon salt
    • 2 teaspoons sugar
    • 1 teaspoon minced ginger optional
    • ¼ cup vinegar
