How to make this recipe
Step 1. Mix white sugar, brown sugar, and water in a medium saucepan. Bring to a boil and cook for about 3-5 minutes. Do not stir at this time. Remove from heat.
Step 2. Stir in the ube flavoring and vanilla. Let it cool for at least 10 minutes before serving. Store in an airtight container in the fridge.
Substitutions
- Pandan Flavoring - instead of ube flavoring, you can use pandan extract or pandan paste.
- Buko Pandan Flavoring - use this flavoring instead of ube flavoring.
- Brown Sugar - the brown sugar can be replaced with white sugar to make the syrup appear less dark.
- Maple Extract - replace ube flavoring for this ingredient.
FAQ and Expert Tips
DO NOT STIR while the syrup is still simmering to avoid crystallization of the sugar.
If you find your syrup too dark, remove the brown sugar and replace it with the white sugar.
Reheat the syrup at 15 seconds intervals using the microwave oven until you are satisfied with the temperature. You can also reheat the syrup

Way too sweet! Tried using in homemade lattes and was just overwhelming sugary and had no Ube flavor. It smelled like Ube when I was making it but did not taste like it.
