    Homemade ube syrup is done within 5 minutes. This syrup is perfect for pancakes, waffles, and French Toast.

    • My Vanilla Syrup inspired this recipe. Ube is a unique flavor I highly recommend to anyone.
    • You can use this syrup for pancakes, waffles, crepes, and French toast. You can also drizzle the syrup on ice cream or hot cereal.
    • You can easily make it ahead of time. Please put this syrup in an airtight container in the refrigerator; it will last up to a month.

    • Brown Sugar

    How to make this recipe

    Step 1. Mix white sugar, brown sugar, and water in a medium saucepan. Bring to a boil and cook for about 3-5 minutes. Do not stir at this time.  Remove from heat.

    Step 2. Stir in the ube flavoring and vanilla. Let it cool for at least 10 minutes before serving. Store in an airtight container in the fridge.

    Substitutions

    • Pandan Flavoring - instead of ube flavoring, you can use pandan extract or pandan paste.
    • Buko Pandan Flavoring - use this flavoring instead of ube flavoring.
    • Brown Sugar - the brown sugar can be replaced with white sugar to make the syrup appear less dark.
    • Maple Extract - replace ube flavoring for this ingredient.

    FAQ and Expert Tips

    DO NOT STIR while the syrup is still simmering to avoid crystallization of the sugar.

    Why is my syrup too dark?

    If you find your syrup too dark, remove the brown sugar and replace it with the white sugar.

    How to reheat the syrup?

    Reheat the syrup at 15 seconds intervals using the microwave oven until you are satisfied with the temperature. You can also reheat the syrup

    Ingredients

    • 1 ½ cups white sugar
    • ¼ cup brown sugar
    • 1 cup water
    • 2-3 teaspoons ube flavoring
    • ½ teaspoon vanilla extract optional
