Sikwate or tsokolate is a Filipino hot chocolate drink. This drink is classically sweet, rich in chocolate flavor, and usually paired with puto maya.
Sikwate is made with tablea disc, sugar, and water. This is usually a breakfast drink like coffee in the morning. Pan de sal can also be paired with this drink.
Pure sikwate is typically not added with milk or cream; however, this drink has been reinvented, and now I noticed people have been making this drink with milk instead of water.
Traditionally, when making the hot chocolate drink, a piece of equipment called batirol or batil is used to dissolve the tablea and mix until it is ready to serve.

What goes into this recipe
- Tablea - sometimes spelled tabliya or tableya. It is the main ingredient of this recipe. Tablea is a pure cocoa tablet or disc. This ingredient can also be substituted with pure cocoa powder.
- Water - you can substitute this ingredient with milk.
- Sugar - this ingredient is optional. You do not have to add this to make your sikwate. You can also substitute this with honey or your favorite natural sweetener.

How to make this recipe
- Bring water to a boil.
- Add the tablea and let it simmer until the tablea dissolves. Stir occasionally. Let it simmer for 5-10 minutes.
- Add sugar or honey. You can also use your preferred sweetener or creamer if desired.
- Serve hot or warm.

Storage
Store the tablea in a cool, dry place. Do not expose to direct heat because the tablea will melt. Instead, I suggest placing the tablea in the refrigerator.
Store the sikwate in the fridge for up to five days.
Top tip
You do not have to add sugar if you are concerned about the amount of sugar in the recipe. Instead, you can use honey or a natural sweetener like Stevia.
You do not have to use a batirol to make this recipe. You can use a fork to dissolve the tablea.
FAQ
The more tablea or cocoa powder you add to the drink, the stronger the taste will be. To avoid a bitter taste, I suggest you start with 1-2 tablea discs and see if you like them or add more if needed.
The sugar adds flavor to the drink; however, you can take your hot chocolate without it.
I suggest, like everything else, please drink hot chocolate moderately.

Ingredients

Instructions
Stove
- Bring water to a boil.
- Add the tablea and let it simmer until the tablea dissolves. Stir occasionally. Let it simmer for 5-10 minutes.

Instant Pot
- Add the water and tablea to the instant pot.
- Set the timer to 3 minutes on high pressure.
- Allow a 10-minute natural release.
- Add sweetener, then serve.
Notes
- Substitute water with milk. Note: Do not use the instant pot if using milk. Dairy products do not do well in the instant pot. Combine milk and tablea in a saucepan on low heat. Do not let the milk boil. This requires constant stirring to prevent it from boiling over the top of the pan until the tablea dissolves.
- You can also use the sauté function of the instant pot to bring the water to a boil, then add the tablea.
- You may use 1-2 tablespoons of condensed milk as a sweetener instead of sugar or honey. You may also use your favorite sweetener or creamer.
