    Delicious and easy zucchini walnut bread can be made anytime. Made with shredded zucchini, this bread is very moist.

    Ingredients

    • All-purpose flour
    • Sugar
    • Salt
    • Baking powder
    • Baking soda
    • Ground cinnamon
    • Oil
    • Eggs
    • Vanilla
    • Zucchini
    • Walnuts
    • Lemon rind

    How to Make this Recipe

    1. Preheat convection oven to 350 degrees F.
    2. Grease 9 x 13-inch loaf pan.
    3. Whisk flour, sugar, salt, baking powder, baking soda, and cinnamon.
    4. Add the oil, eggs, and vanilla. Blend well.
    5. Fold in zucchini, walnuts, and lemon rind. Pour the batter into the grease loaf pan.
    6. Bake at 350 degrees F for 45 to 50 minutes.
    7. Remove from oven, let cool, then serve. Enjoy.

    • ¾ cup sugar
    • ½ teaspoon salt
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon cinnamon
    • ½ cup oil

    • 1 cup grated unpeeled zucchini
    • ½ cup chopped walnuts
    • 1 teaspoon lemon rind
