- 3 cloves garlic, minced
- 1 small onion, chopped
- 2 pounds pork shoulder or pork belly, diced

- 2 tablespoons fish sauce
- ¼ teaspoon ground black pepper
- 1 teaspoon salt (or more if needed)
- 1 cup tomato sauce
- 1 cup chayote squash, diced
- 1 cup carrots, diced
- 1 cup potatoes, diced
HOW TO MAKE THIS RECIPE
- In a large pan or wok, on medium heat, sauté onion and garlic in oil for 2 minutes.
- Add the pork and sauté for 5 minutes.
- Add water, fish sauce, brown sugar, salt, and ground black pepper.
- Let simmer for 30 minutes. Stir occasionally.
- Add the tomato sauce, chayote squash, carrots, and potatoes. Let it simmer until tender, around 15 minutes. Stir occasionally. Add more salt if needed.
- Serve and enjoy.
Tips
- If during simmering the pork starts to get dry, don’t hesitate to add more water.
- To save time, I usually start cooking the pork. While the pork is simmering, I then prepare and cut up the chayote, carrots, and potatoes.
Can I substitute Fish Sauce
Yes, if you have an allergy to fish sauce or simply don’t have it available in your kitchen, you may substitute fish sauce with soy sauce.
