    Pork Menudo

    Pork Menudo is a tomato-based pork stew. It is a traditional Filipino dish that is served during big family gatherings or special occasions. The meat and vegetables are cut diced in this recipe.  Pork stew is usually served with rice.

    Ingredients

    • 2 tablespoons oil
    • 3 cloves garlic, minced
    • 1 small onion, chopped
    • 2 pounds pork shoulder or pork belly, diced
    • 1 cup water (or more if needed)
    • 2-3 tablespoons brown sugar
    • 2 tablespoons fish sauce
    • ¼ teaspoon ground black pepper
    • 1 teaspoon salt (or more if needed)
    • 1 cup tomato sauce
    • 1 cup chayote squash, diced
    • 1 cup carrots, diced
    • 1 cup potatoes, diced

    HOW TO MAKE THIS RECIPE

    1. In a large pan or wok, on medium heat, sauté onion and garlic in oil for 2 minutes.
    2. Add the pork and sauté for 5 minutes.
    3. Add water, fish sauce, brown sugar, salt, and ground black pepper.
    4. Let simmer for 30 minutes. Stir occasionally.
    5. Add the tomato sauce, chayote squash, carrots, and potatoes. Let it simmer until tender, around 15 minutes. Stir occasionally. Add more salt if needed.
    6. Serve and enjoy.

    Tips

    • If during simmering the pork starts to get dry, don’t hesitate to add more water.
    • To save time, I usually start cooking the pork. While the pork is simmering, I then prepare and cut up the chayote, carrots, and potatoes.

    Can I substitute Fish Sauce

    Yes, if you have an allergy to fish sauce or simply don’t have it available in your kitchen, you may substitute fish sauce with soy sauce.

    What to Serve with this dish

    Traditionally, pork menudo is served with rice. You can also eat it with biscuits, dinner rolls, or crackers.  

    How to Store

    • You can keep the pork menudo in the fridge for a week.
    • You can also keep it in the freezer in an airtight container for 1-2 months.
